Baked vege mix



Baked Vege Mix
50g butter
1/2 onion (chopped)
3/4 cup of milk
tablespoon of flour
3 eggs
combination of chopped vegetables, potato, kumara, pumpkin, courgette, carrot, spinch or silverbeet
asparagas
1 cup of grated cheese
your choice of cooked meat, chicken, ham, bacon or sausages
pinch of salt and pepper
Melt butter in a frying pan add onion and cook until clear, add four and stir until no lumpy bits are seen, add salt and pepper and milk then stir on a low heat until it makes a white sauce, put aside. In a pot combine all the vegetables and boil until soft but not soft enough so that they fall apart. Drain water from vegetables and add to the white sauce mixture, if adding meat add it now. Place all ingredients into a flan or similar dish, stir through eggs and grated cheese and decorate with the asparagas on top (can also decorate with sliced tomato). Place in the oven on 175 degrees for approx 30-40mins.

Lovely meal for adults served with a salad and/or chutney

Can alter ingredients more or less depending on what size you wish to make. This will feed at least 4 adults or 6-8 children.

Prep time 20mins, cook time 30-40mins.
