Recipe: avocado and hummus toasties

This is a great swap if you are gluten intolerant and feel like you’re missing out on the avocado toast craze. Or if you love your avo toast but are trying to cut back on bread, this will be your jam too!
Serves 4
Ingredients
1 ripe avocado, halved and pitted
4 rice cakes or corn cakes
Sea salt and freshly ground black pepper
Lemon or lime juice
Hummus (optional)
Pickled onions using your preferred recipe (optional)
1. Peel and slice the avocado. Top the rice or corn cakes with hummus (if using) and add the avo slices.
2. Sprinkle with salt and pepper, then drizzle with lemon or lime juice. And if you want to get fancy, add a few slices of pickled red onion!
