Easy-peasy healthy truffles
These truffles are so easy to make, and with no butter they are secretly healthy! Kids can help with the rolling into balls stage, not to mention the fun to be had rolling the balls in coconut!
Ingredients:
400 grams dates
200 grams raw cashew nuts
1 tablespoon coconut oil
100 grams dried apricots
100 grams cranberries
2 tablespoons cocoa
1 tablespoon rum (optional)
1/4 cup desiccated coconut
Method:
1. Place first 7 ingredients in a food processer and blend (by pulsing) until fruit and nuts are finely chopped and reduced to a sticky paste.
2. Roll into balls.
3. Spread coconut over a plate and gently roll balls in coconut to coat.
4. Store in an airtight container.
