Recipe: No-bake lemon slice
I simply can’t get enough of easy no-bake slices. I always end up sneaking to the fridge to grab another small piece. This one is so good thanks to the lemon juice and zest in the base and icing. You can use any plain biscuits like Super Wines, Maries, Krispies or Scotch Fingers.
Serves 20
Ingredients
150 g butter
395 g can sweetened condensed milk
1 cup desiccated coconut
2 × 250 g packets Milk Arrowroot biscuits
Zest and juice of 1 lemon (about 2 tbsp juice)
Lemon icing
2 cups icing sugar
Zest and juice of 1 lemon (about 2 tbsp juice)
25 g butter, melted
- Line a 30 × 20 cm slice tin with baking paper.
- To make the base, add the butter to a large glass bowl and heat in the microwave for 40 seconds until melted. Stir in the condensed milk.
- Place the coconut and half the biscuits in a food processor and blitz until fine crumbs form. Add to the bowl with the butter mixture.
- Place the remaining biscuits in the food processor and blitz, but leave larger chunks.
- Combine all the crushed biscuits and coconut with the butter and condensed milk mixture. Add the lemon zest and juice and mix until well combined.
- Press into the prepared tin, flattening it down evenly and spreading out to the edges. Chill while you prepare the icing.
- To make the Lemon Icing, add all the ingredients to a bowl and whisk together until smooth. Spread the icing evenly over the base.
- Chill for 3+ hours or overnight to set.
- Once set, cut into pieces. Store in an airtight container in the fridge for up to a week.
